"HINEMOS SHICHIJI Junmai, undiluted (500ml)" is a sparkling junmai that marks the beginning of the evening, perfect for drinking at about seven o’ clock. This sake, made to match the time of day, is ideal as the first drink of a fun party. The mix of yeast and tiny grains of rice make it cloudy, while the carbon dioxide bubbles, produced in the bottle through secondary fermentation in the same way as Champagne, give it fizz and a refreshing palate. The aroma is reminiscent of sugary sour fruits, and as it enters the mouth, it produces a gentle sweet and savory flavor that spreads throughout. The bubbles give a crispness to the whole taste, while the aftertaste is light and dry. This wets the throat, stimulates the digestive system, and arouses the appetite. With a low alcohol percentage, it is also recommended for those who have never drunk sake before. This is a sparkling sake that has won the approval of Sake professionals, receiving a silver medal in the Sparkling category of the Sake section at the International Wine Challenge 2018, the world's most prestigious wine competition.
