"HINEMOS HACHIJI Junmai, undiluted (500ml)" is a cloudy sake that matches a wide variety of dishes, ideal for drinking at eight o’ clock. Tailored to match a particular time of day, this sake provides a gentle, smooth sweetness while food and drink flow at eight or so in the evening. Containing many tiny grains of rice and yeast, it is cloudy white with a gentle, smooth palate. Both the rice flavor that is typical of roughly filtered sake and the acidity produced by the yeast can be felt directly. It has a unique taste to it that cannot be experience with clear Sakes. The fragrance recalls cooked rice, sake lees, and fresh cheese, the flavor is mellow and smooth, and the sweet and savory flavors of rice spread throughout the mouth as you drink. The balanced, fresh acidity gives it a crisp aftertaste, allowing it to be enjoyed with various different dishes. This is a Junmai perfect for drinking with a meal.
