The Fine Sake Awards Japan2019 Sparkling SAKE Division Gold
This is the "Chiyomusubi SORAH sparkling" sake, crafted from Tottori Sake rice, and put through secondary fermentation in the bottle to create an authentic sparkling sake. The name "SORAH" means a beautiful aura, or the star of sunrise, and it's made to live up to those lovely images. The ingredients include Tottori rice, koji, and the clear spring water from the local Chugoku region mountains, slowly fermented at low temperatures. With absolutely no additives or CO2, this is an authentic clear sparkling wine made by secondary fermentation in the bottle akin to champagne. With fresh acidity and the soft taste of rice, it has a clean aftertaste, allowing you to enjoy the feel of the soft natural bubbles dancing in your mouth. Made by combining 150 years of traditional brewing techniques with revolutionary new methods, this sparkling sake is the perfect choice for a toast, or for enjoying alongside a meal.
