"Yonetsuru Andante Junmai" is a refreshing saké that satisfies despite its moderate alcohol content. Japanese saké typically has an alcohol content of around 15%, while this saké is kept down to 12%. By using a patented, new strain of yeast, we have succeeded in achieving a satisfying texture at a lower alcohol percentage, resulting in a Junmai that is gentle on the body. "Andante" is a musical symbol indicating "walking speed," and was chosen to convey that this saké is intended to be enjoyed in a relaxed way, at your own pace. It has a refreshing aroma, a balance of sweet and sour notes, and a clean, light flavor. It is recommended for lovers of Japanese saké with a more delicate constitution, or for customers who simply prefer a gentler drink. The name "Yonetsuru" is derived from the bowing posture of ears of rice and the locally told tale "Crane's Return of a Favor." It incorporates a wish to create a sake that conveys a sense of gratitude and is imbued with sincerity. Under the concept of brewing that starts with rice-growing, this Japanese sake uses locally produced rice to offer a refreshing balance of scent, taste, and sharpness.
